Michelin Snubs Noma as Other Nordic Restaurants Get Stars
Noma failed to win a third Michelin star today as the French dining guide snubbed the Copenhagen establishment
of chef Rene Redzepi that has for two years held the title of the World’s Best Restaurant.
Two venues went straight to two stars: Silvio Nickol Gourmet Restaurant, in Vienna; and Maaemo, in Oslo.
In Copenhagen, Den Roede Cottage, Geranium, Groenbech & Churchill and Relae won their first stars, as
did Funky Gourmet and Galazia Hytra in Athens, Prague has two new one-stars:
Alcron and Degustation Boheme Bourgeoise. Bagatelle, Oslo, regained its first star.
Adding the flavor to food science
A study by Northeastern University network scientists
North American and Western European cuisines tend to use ingredients that share flavor compounds, while East Asian and
Southern European cuisines tend to avoid ingredients that share flavor compounds, according to a study by Northeastern
University network scientists.
The findings - which were reported in the December edition of the online journal Scientific Reports - appear to debunk
the food-pairing hypothesis, which is based on the principle that foods that share flavor compounds taste better together.
Gastronomy Essentials Training

Next November, Gastronomy Essentials Ltd., supported by the Cyprus Tourism Organisation, is organising three new
High Gastronomy seminars in Limassol, Cyprus.
This decision by the CTO to place the "Gastronomy Essentials Training" under its auspices underscores the importance of
this event and its contribution to Food Tourism in Cyprus. Chefs from all Mediterranean countries will be taking part in the
seminars and, most importantly, Food and Tourism editors from European and Mediterranean wide circulation magazines will be visiting Cyprus.

The CHA (Cyprus Hotel Association) will be supporting a series of High Gastronomy training seminars organised by
Gastronomy Essentials Ltd.
The CHA, following the example set by the Cyprus Tourism Organisation, has taken under its wing
the "Gastronomy Essentials Training" event which will be held next November in Limassol.

French Cuisine sheds snooty image
Michelin-starred and other gourmet eateries across France will slash prices for a week in
September in a campaign to bring in a less well-heeled clientele and rid "haute cuisine"
of its stuffy, pretentious image.
"Tous au Restaurant" or "Everyone to the Restaurant" is the brainchild of Alain Ducasse,
the French-born celebrity chef who boasts 19 Michelin stars and exclusive restaurants
in New York, Tokyo and Paris.
