Often referred to as Britain's most adventurous and contemporary chef, Heston Blumenthal is due to open his Dinner restaurant at the five-star Mandarin Oriental Hotel in London in January 2011.

Heston already has three other establishments under his belt - the acclaimed Fat Duck in Bray, as well as his two pubs - The Hind's Head and The Crown - also in Bray in Berkshire.

His latest venture follows in the footsteps of The Fat Duck, offering diners a taste of something different.

What Will Diners Expect at Dinner, Heston Blumenthal's London Restaurant

Dinner will be Heston's first London restaurant and will open under the guidance of Heston's executive chef Ashley Palmer-Watts. Inspired perhaps by the successful TV series Heston's Feasts, where Heston created dishes inspired by the past, the restaurant will offer a range of dishes with historical origins. But Dinner will not be a "themed" restaurant. Ashley Palmer-Watts told Caterersearch: "it's not about ramming history down people's throats...the end product will be very contemporary".

Some of the dishes on the menu include a Bergamot Cured Mackerel Salad, Slow Cooked Rib of Beef and Scallops with Cucumber Ketchup and Peas. Although many of the dishes will be ancient in origin, it appears that Heston is not ready to hang up his liquid nitrogen apparatus just yet.

From what is known of the decor within the restaurant, it is likely to echo both its historical and contemporary inspiration. The Mandarin Oriental website suggests that guests will enjoy uninterrupted views over London's Hyde Park through floor to ceiling glass windows. Older, more traditional materials will also be used, including leather, wood and iron to create a modern but rustic atmosphere. The hotel will seat 140 people and will offer a special chef's table in the kitchen which will seat 12. There will also be room for private dining, for up to six guests.
