Chef Lanshu Chen who works at the Le Mout Restaurant in Taiwan has
been picked as Asia's Best Female Chef ahead of the 2014 announcement of
Asia's 50 Best Restaurants
list in Singapore, February 24th.
The Taiwanese born chef picked up a classical food education in France at the Ferrandi School of Culinary Arts
and a pastry diploma at Le Cordon Bleu in Paris before moving on to work with industry heavyweights
such as Pierre Herme and Thomas Keller.
Chen began working at Le Mout in 2008 exploring her
own unique take on French cuisine that's rooted firmly in her home country of Taiwan. She mixes the techniques of
classic haute cuisine with local ingredients and the traditional Asian balance of flavors.
She describes her work producing new dishes as an extension of every step in her life, adding
that she feels she is "creating a culinary map belonging to myself and this land."
