Every year there is an increase of clients, in hotels and
restaurants, which follow a particular diet or nutrition.
Customer groups with special diets such as sugar free,
gluten free, lactose free, vegetarian, heart disease, celiac disease etc.
A 4-day training program on 16th ? 19th February
which aims to fill the gap of knowledge in the Touristic industry in
Greece and to inform in detail Chefs, cooks, pastry
chefs and the owners of Hotels & Restaurants.

Tuesday 16th February
10.00 - 16.00
Biologist - Dietitian CHARILAOS DIMOSTHENOPOULOS - Clinical Dietitian-Biologist MMedSci.PhDc,
dealing with metabolic disorders and nutrition, specialized on Diabetes, Obesity, and
gastrointestinal and other issues such as celiac disease.
Executive Chef of LAIKO Hospital of Athens, Mr. Nikolaos KOUROUPIS will prepare
menus with 'special diets' of the above categories.
Wednesday 17th February
10.00 - 13.00
Greek Pastry Chef Dimitris CHRONOPOULOS (Demonstrator of VALRHONA in Greece and Kuwait)
will prepare desserts for diabetic and gluten free diets.
13.00 - 16.00
Chef DANAI TSEKOURA, studied in America and England, a graduate specializing
in 'Raw Food Cuisine' having edited menus for famous names of the global art scene, such as Beyonce,
George Michael and Carlos Santana, will present Menus for special diets restaurants
and hotels on Vegetarian-Vegan & Raw Food Diets.
Thursday 18th & Friday 19th February

Chef Mark Guillain-Williams, from the team of ALAIN DUCASSE EDUCATION of the famous French Chef Alain Ducasse,
shall cook recipes with a central philosophy and approach 'SIMPLE, HEALTHY & TASTY'.
OBJECTIVE:
- Use nutrients in a balanced way
- Cook with less fat, less sugar and less salt
- Give a strong added value to vegetables and legumes
- Select the right produce
- Aim for the accurate degree of cooking and seasoning
FOCUS ON:
- Products: vegetables & grains including Gluten Free, fish, shellfish, lean meat & poultry
- Cooking methods : steam cooking, sous-vide...
- Nutrition : nutritional virtues of products
