to Greece on 26th - 28th September, in Thessaloniki, Greece, where
he will demonstrate, one of the most fashionable 3-day
pastry program, with all the latest techniques worldwide, as
his new Sweet Collection 2017.
The program will focus on New Glazing techniques
and New Modern combinations in Dessert and Cakes Textures.

Antarini - TEXTURA Collection 2017
Muesli and white chocolate base, mandarin compote, mandarin white chocolate ganache, orange and cinnamon biscuit, caramel and hazelnut mousse.
Nuqui New
Sesame and hazelnut praline, Milk chocolate mousse flavored passion fruit, mango and Panela compote, lime biscuit, various color glaze.
Oilom - TEXTURA Collection 2017
Chocolate /cinnamon success biscuit, Olive oil and nib cocoa infusion ganache , Dark chocolate mousse , Green olive jam , dark chocolate glaze.
Mallow - TEXTURA Collection 2017
Blackcurrant and almond cream biscuit, White chocolate and violet mousse, Blackberry creamy, Lime and mint sticky jelly, purple glaze.
Quartz - TEXTURA Collection 2017
Chocolate and vanilla biscuit, Cocoa nibs streusel, Dark chocolate Tumaco mousse , Black tea creme brulee, Timut pepper ganache, Black tea coulis.
Chinchina - TEXTURA Collection 2017
Milk and dark chocolate mousse, Vanilla and Tonka creamy.

Cost
- SETE Training will cover 70% of the cost of each participant for individual’s pastry Chefs, who will pay on their own
- For Businesses-Members of SETE (Greek Tourism Confederation), SETE Training will cover also 70% of the cost of each participant
- For Non-Businesses Members of SETE (Greek Tourism Confederation) will cover the 50% of each participant
So, program prices are the following
- €140 SETE Members Businesses and individual professionals
- €190 Non-Members SETE Businesses
Certificate of attendance as well as recipes-notes will be given to all participants
