Culinary Journey to the City of Light

A once-in-a-lifetime experience for 12 professional chefs, cooks and F&B Managers, in the heart of French gastronomy!

Gastronomy Essentials invites you to a unique educational and gastronomic journey in Paris - the birthplace of haute cuisine.

From Michelin-starred kitchens to the renowned ateliers of Alain Ducasse, this program offers an exceptional opportunity for professionals who wish to gain hands-on knowledge from the world's highest culinary standards.



At the Core of the Experience: ECOLE DUCASSE


ECOLE DUCASSE

Training takes place at the world-renowned Alain Ducasse School in Meudon, through an intensive 3-day Best of Alain Ducasse program, based on the most iconic recipes from the legendary Chef's award-winning restaurants.

Participants will receive a Certificate of Attendance from Ecole Ducasse, along with printed recipe material.



The training is conducted in English.

ECOLE DUCASSE

Recipes specially selected to deepen participants’ understanding of Haute Cuisine.

  • Master the development, combination of ingredients, and menu balance using high-quality raw materials.
  • Understand the methodologies used in 3 Michelin-starred restaurants, through recipes from Alain Ducasse a l'Hotel de Paris (Monaco) and Alain Ducasse at The Dorchester (London).
  • Explore the characteristics of ingredients, broths, sauces, plating, and cooking techniques in detail.

LE MEURICE


One of the highlights of our Paris trip is the official dinner at the two Michelin-starred Alain Ducasse restaurant located inside the iconicLe Meurice.

Participants will enjoy an evening of exquisite refinement, where high French gastronomy meets grand architecture and the unmatched atmosphere of historic central Paris.

Each dish is a tribute to seasonality, precision, and Ducasse’s deep respect for the gastronomic heritage of France.




SUR SEINE



SUR SEINE


A unique experience awaits participants aboard the Ducasse sur Seine, the first floating gastronomic restaurant signed by Alain Ducasse.

During a slow, serene cruise along the illuminated Seine, guests will enjoy a luxurious tasting menu, designed with full respect for taste, technique, and sustainability

The scenery is magical, the atmosphere enchanting, and the experience truly unforgettable





Artisan Series: Inside the Alain Ducasse Ateliers



Le Chocolat Alain Ducasse



The journey begins at Le Chocolat Alain Ducasse, the historic bean-to-bar chocolate workshop.

Participants will dive into the world of authentic chocolate, from roasted cocoa mass to the final creation, through processes that blend technical excellence with the philosophy of pure authenticity.

A journey through the flavors, aromas, and craftsmanship of one of Ducasse’s signature creations.


Le Cafe Alain Ducasse



At Le Cafe Alain Ducasse, coffee becomes a true ritual.

Participants will discover the art of micro-roasting, taste rare varieties with unique flavor profiles, and witness Ducasse’s deep commitment to traceability, quality, and the simplicity that showcases the raw ingredient.


Le Biscuit Alain Ducasse



A refined return to tradition. Le Biscuit Alain Ducasse Ducasse is a true artisanal lab dedicated to the authentic flavor of baked goods.

Participants will learn how simple ingredients - butter, flour, eggs - are transformed into refined biscuits and savory delights through precision technique and respect for French pastry traditions.


La Glace Alain Ducasse



A visit to La Glace Alain Ducasse is a delicious revelation: ice cream as you’ve never tasted it before.

Made from seasonal, natural ingredients with no artificial additives, Ducasse’s ice creams are based on balance, texture, and pure flavor.

Participants will taste exceptional creations and discover the refined craft behind this deceptively simple yet sophisticated dessert.

  • 7 nights’ accommodation in a 3-star hotel in Paris

Price does NOT include airfare allowing participants flexibility regarding departure from their place of residence. For those departing from Athens, a group flight will be coordinated at a preferential rate.


Additional Information


All rooms are twin rooms. If a professional wishes to bring a second person, accommodation for the second guest will be free of charge.

For companions who wish to join activities, there will be additional charges for breakfasts and meals.
